Well who knew that there was such a versatile sustainable fruit growing in the tropics that could become a staple part of our diet in the next few decades? As the human need for a more plant based diet becomes necessity rather than choice as we will no longer be able to produce meat at the current level for all the people on the earth the jack fruit is a perfect meat like go-to.

Treat it well, and it will reward you with a creamy, comforting dinner that the whole family will love. Being vegetarian, it's a great meal for a 'no meat Monday' if you're a meat eater and you could dress it up a tad for a very tasty posh dinner dish.

Left Over Turkey Curry - Yum!

For our family, the traditional roast has to be a turkey. I think you cannot beat a whole turkey that has been brined to tenderise the meat and add bags of flavour (through osmosis if you can remember your school science classes!), and then basted to perfection. But once that beautiful bird has graced the Christmas Day table, what do you do with the leftovers?

This is an absolute classic and family favourite and so easy to prepare - Cheese & Potato Pie. It is warm and comforting and made from just a few ingredients that you'll always have in the kitchen. It is naturally vegetarian and gluten free but you can always make it dairy free and vegan as well by replacing the milk and cheese with dairy free alternatives of your choice and the eggs with flax eggs.
